Fine-dining Staffordshire restaurant welcomes in Autumn with new menu

A fine-dining restaurant in Staffordshire is welcoming in Autumn with a new menu featuring home grown herbs and high-quality UK ingredients.
Little Seeds by Jake Lowndes, in Stone – which has been recognised in the Michelin Guide – introduced its Autumn tasting menu on 1 October, which will be available until 23 December.
Four times a year, Chef Patron Jake Lowndes, creates a completely different seasonal menu.
Each is crafted from ingredients grown in the restaurant's greenhouse and foraged from around the county as well as specially selected produce from around the UK.
The Autumn menu includes marigold and perilla grown at the restaurant, as well as foraged elderberries, damsons and medlers.
Jake said: "The starting point is always which of our special herbs we want to feature.
"Then we add what we have managed to forage, and local or UK produce then completes the menu.
"They are the key stages of developing the menu: focusing on those three things"
He added: "It's an exciting way to piece together a menu, because you have all of these different ingredients that have got to work in harmony."

This is the third menu created since owners Jake and Sophie Lowndes – who are both from Stoke-on-Trent - announced that they will be dropping their a la carte options to allow them to "hone in on a more luxury guest experience".
Sophie said: "It feels like a real luxury to be able to change as a restaurant, and do something that we really wanted to do."
"It does feel like a whole new restaurant," she added.
"I think we have changed a lot over the years, but this might be the biggest change we've done.
"It gives people a reason to come back, but it also gives people a new reason to come and try us if they've never been before."
At Little Seeds, the fine-dining experience does not stop with the food itself, with the team enthusiastic to create a relaxed and welcoming environment for their guests.

Sophie added: "We see the dining room sort of like our living room with 12 to 16 guests each night coming to us for dinner.
"We try and make it feel homely and very relaxed.
"There's nothing worse than going for a meal and feeling like you shouldn't be there or feeling out of place.
"You are our guest and we are going to look after you and make you feel comfortable."
The restaurant offers two dinner sittings at 7pm and 7.45pm on Thursdays, Fridays and Saturdays.
There are also lunch sittings available at 12.30pm and 1.15pm on Saturday afternoons.
